Onion Dip

You won't ever want to buy onion dip again. This recipe makes a fresher, healthier dip. I always get requests for this recipe. Add some bacon if you feel so inclined. #oniondip #healthydip
Ingredients

1-3 onions depending on size (1 1/2 cups)

1-2 tsp olive oil

salt and pepper

2 tsp thyme

1 -2 tbsp balsamic vinegar

1-2 tsp garlic powder

1- 1/2 cups sour cream
-
1- 1/2 cups Greek yogurt

Optional: Fresh herbs: thyme or basil
1. Chop onions in small dice. (that's 1/4") Sauté in 1 -2 tsp oil. (Do not use a lot of oil. You don't want greasy onions.) Let cook on low-medium heat. Add a sprinkling of salt and pepper after a 4-5 minutes. You want the onions to soften and thus temper their harshness. I like some onion to catch a little colour. If it appears to be caramelizing very quickly lower the heat. Add dry thyme and let infuse some of oil and onions. Now sprinkle in garlic powder.
2. Now add balsamic vinegar. Let it cook off. Set aside and let cool. You can wait 15 minutes or begin your dip more quickly and then place in refrigerator.
3. Mix with your choice of sour cream and or yogurt. You want a total of 1 1/2 -2 cups so choose a ratio that works for you. Blend well, and refrigerate. Prior to serving sprinkle in freshly chopped basil or thyme.
