For Good Measure

Never let measurements get in the way of cooking.

 

I have asked my foodie friends and they have never been one to actually measure an exact amount of dried thyme to a recipe. Who does that? I'm warning you; you have to use your judgement with seasonings. I generally don't measure; but I do know how much a two-finger pinch gives me. So, with that in mind don't take my measurements as gospel. Adjust accordingly. Now baking on the other hand, can at times, require an exacting hand. If you don't like nutmeg, or your kid's won't eat food with a lot of Dijon in it; do less or skip. And for heaven's sake, don't tell them they ate food they believe they dislike. My children found out after 5 years they had been eating finely chopped spinach. Yes, I'm sneaky like that. They were delighted to discover they liked it. 

 

Your herbs may be fresher or less than perfect; use your judgement. I find that dried herbs and spices aren't 3X as strong as fresh. This is why tasting as you go and preparing a small sample (cooked) can make a world of difference.  If measurements truly matter; I will note it! (Baking is different.) My mantra is use what you have on hand and make do.
