Biscuit Makin' Guide

Here are some best practices for making great biscuits.  Biscuits are a quick bread and taste wonderful the day they are made. Make some for your next bowl of chili, or serve when you don't have time to make dinner rolls. To make the best tasting, light as air biscuits be sure and check out the following tips to make your biscuits a hit at the dinner table.

  • Make sure your baking powder is fresh! Baking powder loses its umph rather quickly.  Once you've opened a container mark the date you want to replace. How long? A mere 10 months!

  • Your butter should be cold.

  • Measure your flour carefully. Spoon into the measuring cup.

  • Use a light hand to mix together. Its okay if you have                                                                                                a bit of stray flour.

  • If you are using a biscuit cutter don't twist as you press                                                                                  into the dough.Twisting prevents a nicely risen biscuit.

  • Avoid scraps, by shaping in triangles or rectangles.

If you must use scraps; re-roll only 2x. Three times results in

      leaden, tough, flat biscuits.

  • Preheat your oven well in advance.

  • Be sure to bake with rack in the middle position.
