Cardamom Loaf with Raisins & Cranberries

A simple cardamom bread with the extra addition of dried cranberries and raisins. Nice change from cinnamon raisin bread. This produced a 2 lb/900g loaf.


Ingredients


1 2/3 cup milk, 406g

3 tbsp butter, soft or hard 42g

3 tbsp brown sugar,40g


4 cups bread flour 480g

2 teaspoons bread, improver, or vital wheat gluten

2 teaspoons salt

2 teaspoons cardamom powder


2 1/2 tsp yeast instant or active


2/3 cup raisins 80g

2/3 cup dried cranberries 80g


Instructions


  1. Place in order preferred. Sweet setting. Watch that dough ball. It should be slightly tacky not sticky.


Do you need to heat your liquids? I never do. Straight from the fridge. Place in any order as that only matters if you use the delayed setting.


I used the Sweet setting and medium crust. I ended up needing to rub butter on outside as it felt a bit crispy for my liking.

I may add pistachios next time.
