Ham and cheese rolled buns
Cheddar and ham rolls

These buns are such a treat! I use a simple bread dough recipe from here. You can use 1 lb of dough to make around 12 to 15 rolls. Use another cheese or add pepperoni if desired. They are extra tasty but really don't take up that much time or work.

Ingredients

  • 1 lb simple bread dough

  • 3-4 tbsp mayonnaise

  • 1-2 tsp garlic and herb seasoning or garlic powder

  • tt salt and pepper

  • 1 egg, lightly beaten

  • 2 cups cheddar cheese, shredded (around 3 oz)

  • 1-2 slices ham or 1.5 oz pepperoni, sliced thinly in strips 3/8" long

  • 2 tbsp onion, finely chopped

  • 3-4 tbsp mayonnaise

  • 1 tsp Italian seasoning

  • 1/2 tsp poppy seed (omit if desired)

  • sprinkle of paprika

Instructions

Read Susie's Tips and Tricks below

1. Be sure that your dough is fully risen - soft and pillowy. If necessary to prevent a sticky dough, sprinkle a little flour down. Roll thinly, approximately 1/4" thick in a 12x18" rectangle. If your dough fights you and won't roll out properly, set it aside for 10 minutes, then return and roll more.

2. Mix together mayonnaise, garlic powder, salt and pepper. Using a pastry brush spread evenly, leaving an edge of about 1 to 1 1/2". Sprinkle the cheddar (or other variety of cheese) along with the ham or pepperoni.

3. Using a pastry brush, dab egg wash along all the sides. Then, roll along the length-wise side firmly and tightly. Be sure to press the end into the dough roll. Prepare baking sheets with parchment or grease generously.

4. Slice with a sharp serrated knife in 3/4" (2 cm) pieces. Place on prepared sheets about 3" apart. Cover and let rise until puffy, approximately 35-40 minutes. Do the poke test.

5. Mix together mayonnaise, Dijon, garlic powder, poppy seeds (see Susie's Tips and Tricks below).

6. Preheat oven to 375F, then gently push down on each roll and flatten just a bit. Sprinkle a little bit of chopped onion on top, then place the mayo mixture on top and evenly spread with a pastry brush. I like a bit of colour, so I garnish with some paprika.

7. Bake on middle rack for 20-25 minutes. Let cool and store in fridge; that is, if you have any left! LOL!

Susie's Tips and Tricks

Like a milder onion flavour? Chop some scallions. Omit poppy seeds if desired, just use the garlic and herb mixture.

You can vary cheeses, ham, turkey, etc. Change the herb mixture if desired.

Try a combination of pesto and mayonnaise for an Italian inspired bun.

With pepperoni, you could add a some sun-dried tomato paste to the mayo, as well as oregano.

If desired, place in a 9X13 pan like cinnamon rolls, just touching each other.
