Korean Beef

This is my quickie version of Korean beef. I use ground beef and or turkey, serving with scrambled eggs. Its not traditional per se, but its very good; my kids eat it up! See my Tips and Tricks to add extras, stretch the recipe further.
Ingredients
1 tbsp peanut or other oil of choice
1 medium onion, small diced
3-4 garlic cloves, minced
2 tsp ginger powder
tt salt and pepper
1 1/2 - 2 lbs ground beef or turkey
1/4 cup soy sauce
1/4 cup brown sugar
1/4 cup white wine
2 tbsp white wine vinegar
drizzle of sesame oil
1/3 of a cabbage thinly sliced 3" strips
orange zest
basil
cilantro
scallions
sesame seeds
bean sprouts
Serve with:
sticky rice (optional)
scrambled eggs (optional)
Instructions

1. In a large saute pan, add a drizzle of peanut oil and, over medium heat, saute onion and garlic. After a couple of minutes, add a generous sprinkle of ginger, salt, and pepper. Add beef and cook about 2/3 of the way through.
2. Add soy sauce, sugar, white wine, vinegar, and sesame oil. Stir together and then add cabbage - I prefer cabbage on the el dente side. If you like it soft, you may wish to add before the sauce. The sauce coats the cabbage and you only end up with a bit of liquid at the end.
3. Once beef is fully cooked, sprinkle with orange zest, herbs of your choice, scallions, and sesame seeds.
4. Serve with scrambled or poached eggs, and some sticky rice or quinoa.
Susie's Tips and Tricks
You can use less protein (e.g. 1 lb package of ground protein) if desired. No issues; I just added a bit more cabbage to make up the difference.
If you use turkey, it will need more seasoning. Be generous with the salt and pepper.
I skipped adding a thickener to this recipe; I let the sauce coat the veggies and just stir, then serve over rice, etc.
Like a spicier version? Go ahead and add some red pepper flakes.
I've also added some canned pineapple and it was well-received.
Add zucchini noodles if desired. Or perhaps some bok choy, some grated carrot. Get those vegetables in those little mouths!
