How does one determine the ultimate waffle? I should qualify, this is the best waffle recipe that doesn't require yeast or whipped egg whites. Those waffles are fantastic, and I promise some day to put a recipe on the site to honor their prestige. This recipe is perfect for a weeknight dinner, a lazy Saturday breakfast. These are nicely crisp with a slight sweetness from the cornmeal along with some crunch.














Ingredients


  • 1 3/4 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/4 cup sugar

  • 1/3 cup cornmeal


  • 1 1/2 cup buttermilk or sour milk

  • 3 eggs

  • 1/3 cup butter, melted

  • 1 tsp vanilla extract, (optional)

1. Preheat waffle iron per manufacturer's instructions.


2. In a large bowl place: flour, baking powder, baking soda, salt, sugar, and cornmeal. Mix together.


3. Add buttermilk, eggs, and butter. (Vanilla if desired.) Blend together until mixture is thick and wet.


4, Place on a 4 grid waffle maker approximately 1/3 cup or as the manufacturer suggests.


5. Cook approximately 3 to 5 minutes or if your machine indicator light that tells you its ready for removal.



Susie's Tips and Tricks


ALWAYS coat the grid plate with oil. Most machines do NOT recommend non-stick spray as it ruins the finish.


Sour milk? Take a tablespoon of lemon juice and add to your milk. No need to wait for it clabber (thicken). Don't forget buttermilk freezes nicely.


Check for the signal your machine has to confirm its cooked through.


Be aware that baking powder has an approximate 10 month shelf-life from opening date. It loses it's oomph.


A handy trick I have is to keep a clean wet cloth nearby to wipe up overflow.


Steam comes out of the waffle iron; be cautious; steam burns hurt.


Do not fill the grid entirely full; the batter will expand.


Finally, store those leftover waffles, if you have them. They are great frozen and defrosted in the air fryer.
