Wacky Cake

wacky cake, crazy cake, chocolate cake, simple one pan cake,
This rich chocolate cake is so good you won't buy the box again.

A simple quick chocolate cake. Mix it directly in the pan! Dairy-free too! Easily doubled just use a 9X13 pan.






Ingredients

  • 1 1/2 cups ap flour

  • 1 cup sugar

  • 1/4 cup cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp vanilla

  • 1 tbsp vinegar

  • 6 tbsp vegetable oil (1/4 c plus 2 tbsp)

  • 1 cup cold water or plain cold coffee


Instructions


1. Preheat oven 350F.


2. Place directly in an 8x8 pan: flour, granulated sugar, cocoa powder, baking soda, and salt.

Blend so that the cocoa powder is fully incorporated. Then make 3 holes in the dry mixture.

Place vanilla extract in one, vinegar in other, vegetable oil in the 3rd.


3. Now pour cold water over the mixture and blend. Be sure to scrape and get the corners and edges. It thickens a bit and bubbles as the baking soda activates.


4. Now place on center rack. Bake 25-30 minutes until a test with a toothpick in the center is mostly dry; a few small crumbs is fine. Remove from oven and set aside to cool.


Note: I sprinkled powdered sugar on top. However, if you choose a frosting be sure that the cake is 100% cool. To cool quicker place on a rack.



Chef Notes


You can double this recipe. Use a 13X9 pan.


You can use regular cocoa powder, or dutch process cocoa.


You won't taste the vinegar and can use any kind.
