Asian Spinach Mint Pesto

Try this asian Pesto sauce on zoodles for extra nutrition

A pesto comes in many forms! Basil is ever popular.  Try this is pesto with an Asian twist! Lower calories too!






Ingredients

  • 4 oz blood orange juice

  • 1/4 cup rice vinegar

  • 1 tbsp sesame oil

  • 2 tbsp soy sauce

  • 2 tbsp thai sweet chili sauce

  • 8 cups spinach

  • 1/2 cup cilantro, a bunch

  • 1 tbsp fresh grated ginger root

  • black pepper

  • white sesame seeds

Instructions

Place in blender juice, vinegar, oil, soy sauce, thai chili, spinach, cilantro, and ginger. Pulverize until spinach is broken down.  Garnish with black pepper and sesame seeds.

Serve on zoodles, or vegetable of choice.
