Blueberry Margarita Jam with a Bread Machine


I love a freshly made jam or jelly. In fact, I've given away many jellies and jams as Christmas gifts. I like my jelly and jams to be a little on the firm side. Some homemade recipes end up with a softer jell. I added pectin to this recipe. It's available in grocery stores in the canning section.


Ingredients


  • 2 cups frozen blueberries, 300g

  • 2/3 cup white sugar 137g

  • 2 tsp dried orange zest pcs

  • 1 tbsp lime juice 15g

  • 1 tbsp Tequila 15g

  • 3 tsp pectin (optional) 9g


  • 1-2 thinly sliced pieces of fresh mint or

  • 1/4 tsp dried mint



Instructions

  1. Place all ingredients in bread machine pan. Set the machine to the Jam Setting. When the machine is complete. Let the product sit for 20-30 minutes for it to set.

  2. Mix in the fresh mint if desired.

  3. Pour in a clean sterile jar and place in the fridge. This product is not food safe on a shelf. It would need to be water-bath canned to be able to be kept in a cupboard.

 

Susy's Tips and Tricks


I did not make this recipe with fresh blueberries. Likely, it would need less pectin or none as fresh berries have more natural pectin.


Some recipes have suggested mashing the fruit; I opted to let the machine do the work. This resulted in about 30% of the berries remaining intact.


This made approximately 12 oz/ 340g of jam.
