Chocolate Mint Crackle Cookies

Perfectly good. Worth the sugar dust on your fingers. This is the second most requested cookie after chocolate chip cookies.
Ingredients
1 cup all purpose flour
1 cup white sugar
1/2 cup cocoa powder
1 tsp baking powder
1/2 tsp salt
4 tbsp butter, softened, I prefer unsalted
2 large eggs, lightly beaten
1 tsp vanilla extract
1/2 tsp mint extract
3/4 cup mint chocolate baking chips, ex. Andes
1/3 cup powdered sugar
Instructions
In a mixer bowl place flour, sugar, cocoa powder, baking powder, and salt. Mix together with paddle. Now add butter. And mix for 60-90 seconds. It takes a minute for the butter to fully incorporate. You want it evenly distributed.
Now add eggs, vanilla, mint extract until blended. The mixture should become one mass. By hand, mix in mint chips.
Place bowl in fridge for 15 mins. You want a slightly firm dough.
Preheat oven to 375F
In a small bowl place powdered sugar and dust hands to roll a 1" scoop in the powdered sugar. Place on greased cookie sheet approximately 4" apart and bake 12-15 mins. As the cookie bakes the the dough cracks. It will be wet at first then firm up and dry.
Remove from sheet and place on rack to cool.
