German Pancake with Apples

Puff Pancake
German pancake with fruit

This is so easy to pull together. You can use another fruit if desired besides apples; I've used peaches a few times. In your neck of the woods you may know it as a puff pancake; its much like a large popover. This is my family's request every Christmas Morning.






Ingredients


  • 6 eggs

  • 1 cup milk

  • 1 cup all-purpose flour

  • 1 tsp salt


  • 2-3 tbsp butter


Optional:

  • 4-5 apples, peeled and thinly sliced

  • 2-4 tbsp sugar

  • 1-2 tsp cinnamon

1. Preheat oven to 400F.


2. Place eggs, milk, water, and salt in a blender for 1 minute on high speed. The batter should be light and fluffy.


3. Place an oven-proof skillet in the oven with butter. You want the pan to get hot (approximately 6 minutes), then carefully pour the batter in the skillet. Shut the door and don't open until its puffed and browned beautifully. It should be done in about 30-25 minutes.


4. When you remove it from the oven it will be very high and full; quite fun. It will fall some, especially if you have fruit added. Serve immediately.


 

Susie's Tips and Tricks


Traditionally this is prepared plain and served with lemon wedges with powdered sugar, but I like to mix it up and prepare as I have above.


If desired, you can prepare the batter the night before and store in the fridge until ready to use.


If you desire fruit in your German pancake, saute the fruit with a bit of butter on the stove. Transfer to the oven for a few minutes while you warm the entire skillet and add batter as above.


If your skillet handle is possibly not oven safe at 400F you can wrap the handle in 2 wet paper towels and then tightly in aluminum foil.
