Mock Bearnaise

True béarnaise -and hollandaise is really a butter sauce. This is my quick version; that won't break. Perfect on eggs, or for a steak.
Ingredients
2 tsp olive oil, lemon infused if desired
1 tbsp shallot, finely minced
1 tbsp tarragon, dried
6 tbsp light mayonnaise
1 tbsp light butter
2 tsp Dijon mustard
water, thin to desired consistency
lemon juice, to taste
salt and pepper to taste
Instructions
1. Sauté on medium heat shallot, dried tarragon in oil. Let the onion soften and become translucent. Turn heat to lowest setting.
2. Whisk in light mayonnaise, butter, and Dijon mustard. Then add lemon juice. How much is up you. I did a good tablespoon.
3. Then thin to your desired consistency with water. Season with more tarragon or other fresh herb you may like. Salt and pepper to taste.
