Parmesan & Rosemary Loaf


Another bread machine recipe. I love a soft bread with some herb and spice. I included freshly ground pepper and some garlic olive oil. This one is great for a savory sandwich. 1 1/2 lb loaf size


Ingredients


  • 1 cup warm water 236g

  • 3 tbsp olive oil 40g

  • 1/2 tsp freshly ground black pepper 2g

  • 1 tsp dried rosemary 5g

  • 1 tsp salt 5g

  • 3 cups bread flour 360g

  • 1/2 cup Parmesan cheese, finely shredded 45g

  • 2 1/4 tsp instant yeast 7g

Place ingredients as your bread machine recommends. This is a 1 1/2 lb loaf. Set the crust to your desired color.


Remove from the pan within 5 minutes of removing from the machine.


Cool for 20 minutes before slicing open.


 

Susy's Tricks and Tips


I used a garlic infused olive oil. It adds a lovely flavour and scent.


Skip rosemary if desired and use another dried herb.


I highly recommend freshly ground black pepper. Black pepper loses its strength rapidly. Preground can be used. You may need a bit more if it's older.


Check that dough ball. You want a dough ball that is smooth and tacky not sticky. Please touch it with your hands and check.


If you are using regular instant yeast, you would want your water to be no more than 110°F/43C.


Waiting for bread to cool is very important. It allows the structure to complete complete cooking, as well as gelatinize the starches. If you cut too soon, it's possible that your bread will be very dry because the structure will cool to rapidly.
